Protein-Packed Quinoa & Black Bean Fiesta Peppers

Instructions:

  • Prepare the Quinoa: Cook quinoa according to package instructions.
  • Prepare the Peppers: Preheat oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds.
  • Sauté Vegetables: In a pan, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
  • Combine Ingredients: In a large bowl, combine cooked quinoa, black beans, corn, tomato sauce, sautéed onion and garlic, cumin, chili powder, salt, pepper, and nutritional yeast.
  • Stuff the Peppers: Fill each bell pepper with the quinoa mixture. Place them in a baking dish.
  • Bake: Cover with foil and bake for 30 minutes. Remove foil and bake for another 10-15 minutes until peppers are tender.
  • Serve: Garnish with fresh cilantro and serve hot.
